Salad
1 tbsp mayonnaise
1 tbsp lemon juice
1/4 c chopped mint
Kosher salt to taste
2 large cucumbers, peeled and thinly sliced

Burgers
1/4 c grated onion (1 small onion)
1/4 c chopped parsley
1 1/2 tsp cumin
1 tsp dried garlic
1 tsp paprika
1 tsp coriander
1-2 pinches salt
1 lb turkey ground
4 6 inch whole wheat pitas, cut in half

1. Whisk mayonniase, lemon juice, mint, and salt in medium bowl. Add cucumbers and toss. Set aside.
2. Place onion, parsley, cumin, garlic, paprika, coriander, and slat in medium bowl and stir until thoroughly combined.
3. Add turkey ground and blend mixtuer inot meat your hands. (Don’t overhandle the meat or burgers will get tough).
4. Form turkey into 16 mini patties and grill until cooked through 3 to 4 minutes per side. While burgers cook, lightly warm pita in toaster.
5. To serve, stuff pita pocket with 4 or 5 cucumber slices and 2 burgers and drizzle with juices from salad. Serve remaining salad on the side.

Some recipes steps are optional. You acan avoid chopping and dicing by buying precut veggies. If those veggies are supposed to be sauteed, you may be able to serve them up raw (be prepared for added crunch). And when time is really tight, skip the last step if it’s just for looks.
